Green coffee has none of the taste or aroma we associate with a fine cup of coffee. It's the heat of roasting that makes it all possible. The roasting of coffee can best be described as the caramelization of the natural sugars stored in the bean. This is what turns the raw bean from green to brown.
The roasting process is a true craft and each roaster makes certain choices about how far to develop the coffee's sugars. A quality roaster is striving to fully develop the flavor characteristics of the bean to show off its true personality. Under roasted coffee fails to bring out the best in the coffee. Over roasted coffees mask the true personality of the bean, and even hide serious flavor faults.
LIGHT OR "CINNAMON" ROAST
Partially caramelized sugars. Mild, nutty, with a somewhat grain-like taste and a slightly sour finish.
MEDIUM OR "AMERICAN" ROAST
Further caramelized sugars. Mild, caramelly-sweet taste with still a hint of sour in the finish.
FULL OR "PEAK" ROAST
Fully caramelized sugars. This is as far as you can "push" the sugars without burning them. Stronger, more flavorful. This roast is a good balance between the bean's sugars and acids. This is the roast we have chosen for the coffees listed below.
